His signature cuisine, a fusion of the family’s culinary tradition together with futuristic techniques and recipes, and always cooked with the finest local produce, best describes this epicurean delight.

The historic cuisine from Rioja contrasts with avant-garde and original dishes, like foie gras curd with red wine caviar and red pepper or Tomato tartar with Norway lobster and white garlic infusion.

The house wine? Marqués de Riscal of course, with its 8 references of red, white and rosé and the star of the moment: the Gehry Selección, 2001, limited edition created to celebrate the opening of the City of Wine.
